Two page spreads

Hi,
I am ordering the deluxe photobook where the dimensions are around 11 x 15.
I have many images that I want to turn into 2 page full bleed spreads. So that means the image's dimensions would end up being 11 x 30. I am thinking this would stretch and distort the images. Any one done this before?
BTW, I will doing all my layouts in PS.
Please let me know what your results were.

Set the crop tool to the 11 x 30 inches at required dpi...180 to 200. Crop image and then cut in half. You may wish to extend inner sides by half in to allow for overlap at inside of book spine
